Zoyschavuyt Whisky
In 2028 viert Soest zijn 1000-jarig bestaan — een bijzondere mijlpaal die om een speciale gebeurtenis vraagt. Daarom hebben Lions Club Eemland en Stokerij Soestdijk de handen ineengeslagen voor een primeur: Zoyschavuyt, de allereerste whisky uit Soest.
Zoyschavuyt ineffable good whisky is een initiatief van Lions Club Eemland waarvoor Stokerij Soestdijk de newmake stookt. De whisky is exclusief verkrijgbaar via Lions Club Eemland.
This unique and artisanal project is intended to invest the proceeds in social initiatives within Soest.
The rye harvest
At the end of August 2025, the rye was harvested on the Soester Eng – the oldest piece of agricultural land in Soest, where rye has been grown for centuries. Together with farmer Pieter, all the rye was taken from the land.
Mill work
After harvesting, the grain is cleaned to remove weevils and small stones, so that windmill De Windhond can process it. The grain is then cracked — a coarse milling process — either by wind power or using the electric milling mechanism.
The distillation
After grinding the rye, the real work begins. In this video, we take you step by step through the production process of a grain distillate: from mashing and fermenting to rough distillation and fine distillation. Discover how these traditional methods come together in a powerful and aromatic new make spirit.
Zoyschavuyt Taste Panel
The Zoyschavuyt Tasting Panel has evaluated the flavours. Based on the new make wood test, a choice has been made for the type of oak that will be used for the maturation casks. Here is a behind-the-scenes look at the tasting panel.
